Chicken-1 1/2 kg Kaima Rice/ Jeerakasala Rice -4cups(800gm) Onion-5 Onion-4small (Bista) Tomato-1big Green Chilli-16 Ginger-1 medium piece Garlic-10 cloves Salt Biriyani Masala-1 tsp Turmeric Powder-1/4tsp Lemon Juice-1tsp Mint leaves-handful Coriander Leaves-handful Cashew nuts-10 Raisins – 15 Ghee-for frying Turmeric-1/4tsp Milk-1/4cup Water- Cinnamon-1 Cloves-4 Cardamom-4 Biriyani Masala Fennel seeds-2tbsp sha jeera-1/4tsp Cardamom-12 Cloves-1tsp Cinnamon-2-3pieces Mace-1/4of 1 Pepper -10 For Marination Tuermeric powder-1/4tsp Chilli powder-1/2tsp Salt- Lemon Juice-1tsp Method Marinate Chicken with turmeric powder,salt,lemon juice and chilli powder for minimum 20 minutes . Roast and powder biriyani masala d keep aside .. Finely slice onion and Deep fry them and keep them in the strainer .. Wash and soak rice for 20 minutes and then drian and keep aside Heat oil in a kadai .. Add sliced onion along with salt and saute till transparent .. Then add crushed ginger-garlic-chilli and saute till light brown colour .. Then add mint-coriander leaves and turmeric ..Saute for few seconds Now add tomato pieces stir and close ,cook well.. When done open the cooker and marinated chicken pieces ..mix well Close and cook for till done in medium flame .. When chicken is 3/4th done add fried onion and again cook . Then add 1tsp of biriyani masala to the chicken and mix.. Then add lemon juice . Check the salt and adjust if needed .. Then keep aside .. Boil water and add spices along with salt .. Then add ghee and mix.. When started boiling ,add rice and allow to boil.. Then close the kadai and lower the flame .. stir in between .. When the water has completely absorbed off the stove keep the rice undisturbed for 20 minutes .. After 20 minutes the rice will be perfect .. Now we need to dum the biriyani.. In a big nonstick kadai add some ghee then add the chicken masala in the bottom .. on top of that sprinkle cashew-kissmiss,leaves ,fried onion and biriyani masala .. Then layer the rice .. In each layer sprinkle everything shown in the video .. Finally close the kadai with a foilpaper ..then close with the lid Then heat a tawa and place this kadai on the tawa and dum .. So after 30 -35 minutes tasty yummy Thalasseri Dum chicken biriyani is ready to serve

Cool them down and grind them into a fine powder in a mixer jar. 3. Garam masala is ready for the Biryani, keep it aside. To make the Garnish: 1. Pour oil enough for deep frying in a kadai and heat. 2. First, fry the sliced onions until golden brown in colour and keep them aside. 3. Then fry the cashewnuts until they are golden brown and keep them aside. 4. Finally fry the golden raisins until they nicely plump up and keep them aside. To make the Chicken Curry: 1. Take ghee in a pan and add the onions. Saute until the onions are golden brown in colour. 2. Add garlic paste, ginger paste, green chili paste, mix and saute for 2-3 mins. 3. Add the chicken pieces and mix to make sure they are coated well. Cook for 5 mins. 4. Add turmeric powder, salt and mix again. Cook on a high flame. 5. Add the ground garam masala and mix. Then add the tomatoes and cook for 10 mins.' 6. After 10 mins, add the whisked curd, mix and continue to cook on a high flame. 7. Bring the flame to a medium and add mint leaves and chopped coriander leaves. 8. Mix well and add 2-3 handfuls of crushed fried onions. Mix well. 9. Finally add the thick coconut milk and mix well. (optional) To cook the Rice: 1. Wash and soak the seeraga samba rice in water for 10 mins. 2. Take ghee in a deep pot and add in the whole spices. Saute for a few seconds. 3. Pour 3 1/4 cups of water for 2 cups of rice. Add salt, mix and close the pot to boil the water. 4. Add in the soaked rice, close the pot and cook until the rice is done on a medium high flame. 5. Rice for the Biryani is ready. Keep it aside. To Dum Cook the Biryani: 1. Take a deep bottomed pot and layer it with all the chicken curry in the bottom. Spread it out evenly. 2. Put another layer of rice over it and spread it evenly. 3. Add 1 teaspoon of ghee, sprinkle a few chopped coriander leaves, mint leaves, fried onions, fried raisins and fried cashewnuts. 4. Sprinkle a little garam masala powder and then add the saffron water on all sides. 5. Place another layer of rice over this and spread it out evenly after gently pressing it all in. 6. Now repeat adding ghee, coriander leaves, mint leaves, fried onions, fried raisins and fried cashewnuts. 7. Sprinkle a little garam masala powder and add saffron water. 8. Seal the pot with a foil and cover it with a lid. 9. Place this biryani pot on a heated tawa and dum cook the biryani for 20 mins on a medium low flame. 10. Have you tried making malabar chicken dum biriyani in kacchi style? This easy to make recipe gives a flavorful biryiani and is a sure hit whenever I make it. Ingredients (Serves 6) 1. Jeerakashala rice / Kaima rice - 2 cups (Soaked in enough water for at least 25 minutes) 2. Cardamom – 5, Cloves – 6, Cinnamon stick – 1 inch broken, fennel seeds – 1 pinch, bay leaf – 1, whole black pepper corns – 1/4 tsp, star anise - 1 Ghee – 1.5 - 2 tbsp Salt – To taste 3. Chicken – 1- 1.25 kg, cut into medium pieces 4. Yoghurt – 1/3 cup Ginger-garlic paste – 2 tbsp Green chilies – 7-8, ground to a paste or crushed Onion – 2 medium(around 2.5 - 3 cups), thinly sliced and deep-fried (Remove 1/4 th of the fried onion to garnish later) Tomato – 1 medium, chopped Cilantro / coriander leaves – 1/4 cup, chopped Mint leaves – 1/4 cup, chopped Turmeric powder – 1/2 tsp Kashmiri chilly powder / regular chilli powder – 1.5 tsp Coriander powder – 1.5 tsp Biriyani masala / garam masala powder – 2.5 tsp (Recipe below ) Cumin powder – 1/2 tsp Salt – To taste Oil – 2 - 3 tbsp 5. 🧳 SHABEER: 🤍 🎥 WATCH: Making South Indian Idiyappam & Dosas: 🤍 👕 DAVID’S BEEN HERE SHIRTS & MERCH: 🤍 My ninth day in Kerala, India began at Kuttichira Biriyani Centre in the city of Kozhikode, also known as Calicut. Calicut is the food capital of Kerala. It’s in the northern part of Kerala, which is famous for its biryani. I met Shabeer from Travel Explore Channel headed inside the kitchen. Inside, there were guys cutting tomatoes and onions, blending chilies, adding coriander and ginger, frying fish and chicken. They were making both Thelassery biryani and Calicut biryani. For the Calicut biryani, they added a mountain of onions and tomatoes, garlic, ginger, and chilies. That would make one layer of the biryani. Then, they’d add crispy onions, coriander, and cashews as another layer. Then, the next layer is rice, chicken, beef, and fish. The rice was short-grain rice, unlike the long-grain rice in Hyderabad. I watched them add onions, tomatoes, garlic, ginger, coriander leaves, curry leaves, chilies, and salt to make the biryani masala. I got a chance to try it. It was full of flavor and was super spicy with the chilies. I could taste the curry leaves and coriander, the burst of tomatoes and onions, and more. I watched them finish up and seal the pots. Then, I headed back outside. I quickly visited Calicut Beach and its boardwalk before taking a one-minute tuk-tuk, or auto, ride to the Bombay Hotel. I got some carrot cake, banana fry, bonda, and much more! The banana fry was a very sweet and tasty fried plantain with batter on the outside. I also loved the dense carrot cake, which was like pure carrots. The sugeen was super sweet, with a fried outside and a grainy interior. The bonda (fried mashed potatoes with chilies, onions, and sesame seeds) was softer and had a light fry on the outside. Next, I moved on to the chatti pathiri, which is a sweet and fluffy layered cake made of rice flour, eggs, cashews, and raisins. I also tried a sweet egg dish called muttamala, which is made of egg yolks and egg whites in the shape of a heart. The stringy egg almost looked like thin pasta and the egg whites were smooth and gelatinous, almost like flan. Then, I went into the kitchen to see how they make dancing chai, which has a layer of chai on the bottom, frothy milk in the middle, and foam on top. It looked like a café con leche and was my favorite part of the meal, which came to 186 rupees/$2.45 USD. From there, we left the Bombay Hotel took an auto ride to the 14th-century Mishkal Mosque. Unlike other mosques I’d visited, it didn’t have a minaret or a dome. It’s the place to visit if you’re looking for historical attractions. Before going inside, I took off my shoes and socks and washed my feet. We visited the first level and saw an amazing table and the beautiful main level. It was the first medieval mosque I’d ever been to and is the only one surviving in Kerala. Then, we hopped back in the auto and arrived back to the biryani center. I got half-portions of the beef (buffalo) and chicken Calicut biryanis. They came with mint-coconut chutney and curd. It was amazing and spicy with the curd. The mint-coconut chutney was super spicy! The beef was so tender and was practically falling apart! This was the best biryani I’d ever had in my life. The chutney gave it such a nice tang. It was similar to some Chinese fried rice dishes I’d had. The chicken was so buttery and tender and they were all inexpensive. I hope you loved coming with me to try Malabar biryani in Kerala, India! Unlike the other kind of popular biryani where basmati rise is used, thalassery biryani is made using a premium quality short grain rise which is also known as kaima rise or biriyani rise in Kerala. Ingredients 👇 To marinate 🍗Chicken - 1 kg 🍗Curd - 1/4 cup 🍗Crushed Ginger Garlic and Green Chilly 🍗Chopped Tomato - 1 🍗Coriander leaves - 2 tbsp 🍗Mint Leaves - 2 tbsp 🍗Turmeric Powder - 1/2 tsp 🍗Chilli Powder - 1 & 1/2 tsp 🍗Coriander Powder - 1 tsp 🍗Garam Masala - 2 tsp 🍗Cumin Powder - 1/2 tsp 🍗Salt - to taste 🍗Lemon Juice - 1 tbsp 🍗Fried Onions - 3/4 cup 🍗Oil / Melted Ghee - 2 tbsp Keep aside for atleast 2 hours or preferably over night in fridge. To Cook Rice 🌿Ghee - 2 tbsp 🌿Fennel seeds - 2 to 3 pinch 🌿Cardamom - 4 to 5 🌿Cloves - 4 to 5 🌿Cinnamon - 1 🌿Bay Leaf - 2 🌿Star Anise - 1 🌿Kaima Rice - 2 cups Washed and soaked for 30 minutes and then drained. 🌿Water - 3 and 1/2 cups 🌿Salt - to taste Cover and cook for just 5 minutes in medium flame and switch off. Keep aside for another 10 more minutes. To Dum and Garnish 🌿Ghee roasted cashews and raisins 🌿Saffron + water + Kewra water or rose water 🌿Fried Onions 🌿Mint and coriander leaves After Dum 🌿Keep it closed airtight (I’ve used aluminum foil) 🌿Keep a weight on top 🌿30 minutes in low flame with a tawa on bottom. 🌿Switch off the flame and open after another 20 minutes.
