Does it Deep Fry: Whole Duck 🦆 Unlike other poultry like chicken or turkey, duck is covered in an extremely thick layer of fat. This is because ducks swim - the fat keeps them buoyant and also protects them from the cold water. As a result, the cooking process is quite different. In my first attempt deep frying duck, I kept the oil temp at 375F. This is slightly hotter than I would normally fry chicken, and I was surprised by the lack of browning even after 30+ minutes of frying. It was as if the duck had so much fat that needed rendering, it refused to fully crispy up. Next time I’ll try with oil closer to 425F, but for now, sadly duck does not deep fry. After checking in to my luxury hotel in Surabaya, I went out to explore the streets for some tasty local food. I was specifically looking for "Nasi Bebek Goreng" which is fried duck with rice. With the help of Google Maps I went exploring, and found a street cart with good reviews. At 20,000 rupiah ($1.30 USD) for a portion it was insanely good value for a big leg of duck, rice and tempeh goreng. For dessert I ate Pisang Ijo from the vendor working beside the Nasi Bebek cart. Pisang Ijo is a popular West Java dessert consisting of "green bananas" coated in coconut milk and palm sugar syrup. It has a sweet and creamy texture and a delicate coconut flavour. The bananas that they use are a specific type that are green even when ripe, and a big more starchy than regular bananas. As if dinner and dessert wasn't enough, I stopped by a Martabak stall on the way back to my hotel. Martabak is something like a thick savoury pancake. Peking Duck, Easiest way ever! Follow me :) Ingredients One whole duck 6 tbsp water 6 tbsp honey 4 tbsp Chinese five-spice powder 2 tbsp soy sauce 2 tbsp brown sugar Salt Black pepper Prick the duck all over with a small knife or fork. Sprinkle the duck with salt and pepper. In a small bowl, mix together the honey, water, five-spice, soy sauce and brown sugar. Brush the duck all over, inside and out. Let dry for about 10 minutes and then brush again. Repeat for few times. Refrigerate overnight. Stuff with oranges. Bake the duck at 350F for 45 minutes, then baste with glaze and flip the duck. Bake another 45 min, baste and flip again. Make final bake at 400F for 15 minutes. Let it rest for 10-15 minutes. #duck #Shorts #foodies #cook

The name of guitar duck is pretty self explanatory - they debone the duck and stretch it out into the shape of a guitar. Then the duck is marinated, left in the sun to dry, roasted for forty minutes, and finally deep fried to an insanely golden crispiness. Ramruay Pochana (ร่ำรวยโภชนา พระราม 3) is a Thai Chinese restaurant, and one of the things they are known for is serving their complete meal set which is very affordable for what you get. Typically the set comes with Peking duck, which is also some of the most crispy skin you’ll ever have. But if you pay an extra 200 THB for a total price of 1,700 THB ($54.25) for the entire set, you get the legendary guitar duck. For me, the best part of the experience was watching and learning how they transform a duck into a guitar to maximize the crispy surface area. It’s pretty hilarious and awesome all at the same time. Some of the dishes in the meal set were a little plain, but overall, it’s an affordable meal set for an entire family, and it’s especially focused on the insanely crispiness of the Peking duck and duck guitar. They have a number of locations around Jakarta, and I went to the location that was closest to where I was staying (🤍 in South Jakarta. At Bebek Goreng H. Slamet, you have a few different choices of deep fried duck (bebek goreng). If you're feeling really hungry you could order an entire fried duck, or you can just buy deep fried duck by the piece, and you have a choice of either the dark meat thigh or the breast. Since I couldn't make up my mind which one to choose I decided to get both of them, and I ordered the complete full plate set that included the deep fried duck plus rice, a plate of green herbs and vegetables, and last but not least an incredibly delicious sambal chili sauce. The bebek goreng arrived to my table, and it was definitely pretty small, but it made up for its size by being packed with incredible flavor. I'm not sure exactly how the duck was prepared, but I'm guessing it was covered in a thin layer of flour or something like that before being deep-fried. It didn't have a real batter feel to it, but at the same time it did have an extra incredibly crispy skin and golden layer around the outside. And along with the deep fried bebek goreng, what was really mind blowing about my meal at Bebek Goreng H. Slamet, was the sambal chili sauce. It was an oil-based sambal, and it was just packed with red chilies and garlic. The chili sauce went so well together with the deep fried duck, rice, and then eating each bite with a fresh piece of lemon basil, was outstanding. The bebek goreng at Bebek Goreng H. Slamet is undoubtedly very greasy, and it will leave you feeling like you just used to lip gloss, but there is no denying that the food is incredibly tasty. Bebek Goreng H. Then, right beside that street stall, there was Chinese fried intestines with tons of Sichuan chilies! We also ate some amazing and spicy Sichuan style wraps, some Sichuan spiced soybean starch jelly, and walked through the vegetable and meats area, perfect for picking up the ingredients needed to cook a ton of different Chinese recipes. After visiting the market, we went to a famous Dan Dan noodle joint in a little alleyway of Chengdu, and tasted a bowl of Sichuan Dan Dan noodles and of course some spicy chili oil wontons! They were so amazingly delicious and fragrant!
